The definition of a quirky, artisanal producer with just six cheeses available through farmers' markets and delis. It's two years since Standhill started production and the first batch of Minto Mellow Cheddar has now matured. Winter snow led to transport issues and a glut of milk, which was promptly transformed into a fresh crowdie, now a bestseller. Also popular is the fabulously named Fatlips Castle Blue – called after a local landmark, not one of the coos.
