An Arbroath smokie, hot from the barrel and eaten with your fingers from its greaseproof paper wrapping, is right up there with any world class street food. If Iain Spink has any trout, try that hot smoked too. The traditional smoking takes place at various food events through the year and weekly farmers' markets in Fife – look out for, or sniff out, the plumes of beech and oak smoke.
