At Havra's Hand-Made Fish Company, Dave and Tricia Parham produce smoked haddock and smoked organic salmon from the island of Skerries. Experimenting with the effects of various woods such as beech, olive and juniper, they also have a supply of old oak whisky barrels for general smoking purposes. One of Rick Stein's Food Heroes, the Parhams use ethically caught haddock, cod, salmon, hake and ray, fresh from the boat every day.
