Tucked along a side-street in Dunkeld and almost casting distance from the River Tay, the Springwells smokehouse began life smoking fish caught locally. That service is still on offer, but their well-regarded smoking techniques are also applied to Loch Duart salmon, organic sea trout from Shetland and wild salmon obtained in small quantities from west-coast fishermen. It's all sold from a shop on site and online.
