A family company selling lamb, mutton and beef to some of the UK's most discerning restaurants, including The Ivy and St. John in London. The Blackface sheep and Galloway cattle reared on their own heather-covered hills are sold alongside game, veal, slow-grown pork and seasonal free range Bronze turkeys, sourced from local farms and estates around Scotland. The company is known particularly for their mutton, from ewes that roam freely across the farm hills for up to five years. It's hung for a fortnight, and has prompted Hugh Fernley-Whittingstall to describe it as "particularly outstanding".
