Getting the balance between quality, comfort and good taste is hard to achieve, but this undemonstrative former shooting lodge in the rolling hills of Dumfriesshire manages admirably, with some simple but deceptively skilled cooking and good local sourcing. The three-course dinner is a fantastically good deal.
