Just the right side of Peebles to be handy from Edinburgh’s bypass the Horseshoe Inn still feels very much the historic coaching inn. Well executed comfort food is the order of the day in the cosy bar/bistro with pork belly and chicken curry warming up the menu but in the adjacent Bardoulet’s Restaurant, wonders are afoot. Frenchman Patrick Bardoulet came to Eddleston from his first kitchen stint near Paris by way of Ireland, Cyprus and Denmark. En route he honed smooth culinary skills. West Coast crab is perfectly lifted with a citrus crust and sits alongside a classic cheese soufflé to start. Best of Borders beef served up with braised oxtail is a fine signature dish. Desserts are equally decadent with the assiette allowing diners to sample all four sweet options. If that assiette finishes you off – and it may well do – they have eight chic bedrooms.
