Jitsu differs from most other Japanese restaurants in aiming to offer a style of eating that's lifted directly from domestic Japanese cooking, with no Westernisation whatsoever. This means no sushi and a menu focussed on dumplings, fried noodles, various forms of ramen or udon soup, along with one or two teriyaki dishes. Designed to recreate the feel of a Tokyo-style café, the Rose Street venue is small and simple, though the owners plan to open further venues of different sizes under the brand in both Edinburgh and Glasgow in the course of the year.
