No, Kyloe is not Edinburgh’s latest culinary temple to all things far eastern. Here, they worship something closer to home. Kyloe is Gaelic for ‘highland cow’ and it’s beef that gets top billing at this self-styled ‘gourmet steak restaurant’ in the Rutland Hotel. This ain’t your 70’s macho steakhouse, however. From the op-art cows on the wall to the cowhide-upholstered booths, the L-shaped room with stunning Castle views is thoroughly modern. There’s welcome theatre in the informed, attentive service: a board of steak cuts is presented and explained to help you decide. When it comes, the food shows Chef Dave Haetzman’s deft touch with good Scottish ingredients like grass-fed Aberdeen Angus steaks, Shetland crab and Ayshire pork. A starter of fritto misto has perfect tempura-light batter and steamed Loch Etive mussels are clearly fresh. Presentation has a freshness too, with trios featuring twice: one a steak board of three cheaper but no less tasty cuts from Hardiesmill Farm. Three mini ‘slider’ burgers are made from venison and redcurrant, ground Aberdeen Angus and, the standout, wild boar and apple. Desserts cover most bases, including a chocolate fondue. Though if you’ve just shared 1.3 kgs of prime rib, dessert’s probably the last thing on your mind.

Welcome to Edinburgh’s first gourmet steak restaurant. Our first floor restaurant can be found in The Rutland Hotel at Edinburgh’s West End and boasts enviable views of Edinburgh Castle. The name Kyloe, an old Scots word for Highland beef cattle, was chosen for the restaurant as it represents the strength and versatility of Scottish beef produce. We use cuts from pedigree Aberdeen Angus – supplied by some of Scotland’s top farms and butchers – to bring our customers the best possible steak experience. When selecting suppliers, Kyloe’s award winning head chef David Haetzman was not only looking for a fantastic product but for suppliers who take provenance seriously. Hardiesmill, based in Gordon in the Borders, was chosen as one of Kyloe’s main beef suppliers thanks to the owners’ rigorous approach to breeding, feeding and handling. Using a selection of traditional cuts, along with some more unusual cuts chosen for their texture and flavour, David has created an innovative Grill Menu. This is complemented by our robust a la carte menu which features Scottish seasonal produce, responsibly sourced and simply prepared to create a series of compelling dishes, including a tasty shellfish section and mouth-watering desserts created by our in-house pastry chef Amanda Jordan. Our unique and interesting wine list has been sourced through numerous wine merchants and features Kyloe’s signature wine ‘Angus the Bull’, a South Australian Cabernet Sauvignon which is the ideal complement for your steak.

I have been here twice. On both occasions the food has been delicious and the service good. On the second occasion, the service by our Australian waitress was exceptional. I would highly recommend eating here.
