Aiming for a 'fresher, up-to-the-minute approach to Italian cooking', this new venture from Piero Sarti (where Bouzy Rouge once traded) has a concise menu that changes seasonally. The atmosphere is straight out of a Tuscany trattoria with wooden tables and chairs, dried chillis hanging here and there and walls adorned with Italian memorabilia. The use of fresh ingredients is evident from the start. The caprese con bufala, using fresh buffalo mozzarella from Campania, balances soft creaminess against plump firmness, partnered with the sweet sharpness of Neapolitan tomatoes and basil, and drizzled with Tuscan olive oil. More inventive territory is explored with a selection of 'orologio' dishes. Meaning 'clock', the plate is arranged with everything from supple, tender prosciutto San Daniele (aged an impressive 24 months) and flaky parmiggiano Reggiano, to roast peppers and artichokes served with fresh bread and a glass of prosecco. Italy's take on tapas, known as assaggini – loosely translated as 'small tastings’ –, are offered at the bar, while main courses are often rustic, including hearty Tuscan pork sausage stew. Those with a sweet tooth will be well served by desserts including tiramisu – or the sgropino that combines ice-cream, prosecco and vodka: a suitably creative concoction.
