With cinema, theatre, pubs, students – heck, even a ‘gentlemen’s club’ or two on its doorstep, No 1 Sushi Bar is a great place to sit and watch the world go by. There’s real pleasure to be found in sipping miso soup and looking at a pretty platter of fish while bustle hustles and the number sixteen bus revs up on the other side of the plate glass window. As the name suggests, sushi is the main focus here and generally it’s of a decent quality, with fresh fish delivered daily. The salmon sashimi in particular is delicious, brightly fresh and creamily textured. The nori is exactly right on the tuna maki and, while the batter on the tempura prawns isn’t quite as light as it could be, the prawns are moist with a good flavour. There’s nothing ground-breaking here, but No 1 is none the worse for that. It’s a perfectly acceptable place to grab some peace and sushi, before plunging back out into the busy, busy, rush, rush of Tollcross.

If you cannot tell the difference between good and bad Sushi then I do not think you should be writing restaurant reviews online. And clearly the thing about sushi is the freshness and quality of ingredients, the skill of the sushi chef and the presentation.
On all 3 counts No 1 Sushi Bar fails to deliver, and as Chris Radley points out, better to go to Tangs

Mayonnaise on your Sushi? I don't think so. The place is alright, but not really the kind of place I was looking for. Service slow, food okay, menu limited.

Having lived 5 years in Japan, we were really looking for a place to remind us of the great taste of Japanese cuisine. After a few fault attempts around Edinburgh I think we've finally found the place.
Now, my opinion is that sushi could not be a base for comparison as ingredients and recipes are quite straight forward (and I am telling you this as a person who actually worked as an assistant chef in a sushi restaurant in Japan) so we went for ramen and udon noodles. Taste was what one could usually expect from such noodles in Japan. Prices were quite reasonable, staff - friendly Chinese lassies and lads, service was good, a small souvenir calendar came with the bill. Highly recommended.

The food here was incredibly disappointing. I've eaten in top restaurants in Taiwan and China and my wife, who is a chef from Taiwan (and has eaten in Japan), and I thought this was horrendous. The fish was dry, rubbery, tasteless and everything tasted poor. The sushi platter was awfully expensive for what we got. We cannot recommend this place at all. While it's very difficult to find Eastern food in this country that's anywhere near as good as the real thing (almost impossible), Tang's is actually pretty tasty. Head there instead.
