Paisley's New Street is a relatively quiet thoroughfare away from the main shopping hubbub, playing host to the local arts centre, a venerable cask ale pub - and Raeburn's, run by owner and head chef Kerr Raeburn. With an offer based exclusively on fixed price menus, it's not a place to pop in for a quick bite, but the candle-lit ambience of the rather classy dark wood interior - and, of course, the cuisine - attracts a steady stream of evening customers throughout the week. The accent is firmly on rich, luxurious dishes led by the restaurant's grill menu of steaks from grass-fed Highland cattle, but more than a dash of global influence inspires some of the mains; lamb shank, for example, coming with roasted vegetable couscous and harissa gravy. A classic Scottish Cullen skink, which goes very nicely with rough grain bread, is a creamy and subtle treat right down to its tiny cubes of potato somehow cooked to exactly the right consistency. As well as a wine menu which reflects a broad spectrum of new and old world tastes, diners can also choose from an unusually broad assortment of quality bottled beers, including those from the local Kelburn brewery.
