Considering its name, it comes as little surprise that the bruschette at Giovanni Cariello's deceptively modest-looking Haymarket restaurant are something special, the Napoletana balancing the salty tang of anchovies and capers against the sweetness of sun-dried tomatoes. Chef-patron Cariello exploits top quality raw ingredients throughout the menu, as demonstrated by a classic starter of insalata caprese that makes use of fresh, plump slices of mozzarella and properly ripe tomatoes, drizzled with a rich, spicy olive oil. Delicate egg pasta parcels filled with lobster are served in a wonderfully light cream and tarragon sauce, while chicken breast stuffed with asparagus exudes the heady anise fragrance of Pernod. Fish from Eddie's Seafood Market in Marchmont features heavily, with a daily grilled fish special on offer, alongside dishes such as a creamy risotto al frutti di mare that showcases the freshest of Scottish seafood. The attention to quality is also evident in the choice of top-notch house wines. Make sure to book in advance though, as the tiny, unassuming dining room fills up quickly, even early in the week – then simply sit back and enjoy the skilful, confident cooking, brought to the table by distinguished-looking, professional waiters.
