In the early 60s, Janet Henderson, who had become a vegetarian after her travels in continental Europe, opened the Salad Table as an outlet to sell food produced on her family's East Lothian farm. It may be more refined than it was in its early days, when diners used to sit on orange boxes, but there's still a hippy feel to the dated décor, and the emphasis on healthy, fresh, organic, seasonal and locally-produced ingredients remains strong. Soup of the day and a great selection of salads are served up alongside baked potatoes, quiches, croquettes and pizza. Hot specials change daily, but might be a colossal slice of pastry-encased nut loaf atop a mound of vegetable mash, or a vast serving of chunky, piquant curry. Puddings are mainly cold and range from flapjacks and cookies to zingy fruit compotes topped with yoghurt or crème fraîche. A great place for lunch in town, the large, grotto-like dining room tends to fill up quickly and the canteen-style set-up can mean scrabbling for a table while balancing a tray of food. It's less busy in the evenings, however, when live music adds to the casual, convivial mood.
