Long established as a late-night eatery for nighthawk students and Edinburgh festival-goers (the Teviot and Udderbelly venues are just across the road), Negociants has recently been taken over by members of staff and was implementing various changes at the time of going to press. The same relaxed ambience which has served the venue well for almost two decades will be maintained – the management describe the Negociants vibe as 'trendy but not George Street' – and amplified with the planned addition of sofa seating. Wi-Fi, three internet terminals and a selection of exotic beers and teas will complement a new menu consisting of old favourites such as nachos, burgers and Negociants' Cajun chicken sandwich, while new additions to the menu, including all-day Sunday roasts, are in the pipeline.
