In 1965 Peter Boizot, an eccentric English entrepreneur, teamed up with a fiery Italian designer named Enzo Apicella to create a style-conscious restaurant in Soho. Pizza Express has since mushroomed into 300 restaurants across Great Britain. Both Glasgow outlets have slick modern interiors that could easily be at home in Milan. Don't let the fact that it's a chain put you off. Any corporate economies of scale are balanced against an organisation that knows about pizza and wine. Well-trained staff and motivated mangers practically give the restaurants a family-owned feel. The open kitchen offers a bit of theatre for dinners as the dough-tossing chefs are decked out in stripy Gondolere shirts. If pizza and pasta are not for you, the menu will appear limited. But the focus is on quality. Starters include a meaty stew of cannelloni beans, sausage and portabello mushrooms, served with toasted ciabatta. The 'Etna Romana' pizza with paper-thin base is topped with scorchingly hot salami from Calabria, sweet peppers and smoky ham covered in strong grana padano cheese. It is a taste sensation. The Sauchiehall Street menu has slightly more choice as it is used to test-run new dishes.
